One of my old time favorites is this rhubarb strawberry pie recipe. I combines health benefits of rhubarb with sweetness of strawberry. Enjoy!
Ingredients:
1 pie crust
1 cup rhubarb, chopped
1/2 cup sugar
1/2 cup water
1 tablespoon gelatin
1 cup strawberries, sliced
Instructions:
Preheat your oven to 375°F (190°C).
Roll out the pie crust and place it in a tart pan. Prick the bottom with a fork and bake for 15 minutes.
In a saucepan, combine the rhubarb, sugar, and water. Cook over medium heat until the rhubarb is soft and the mixture has thickened.
Remove from heat and stir in the gelatin until it has dissolved.
Pour the rhubarb mixture into the baked pie crust and let it cool to room temperature.
Arrange the sliced strawberries on top of the rhubarb jelly.
Chill in the refrigerator for at least 2 hours before serving.
