Rhubarb Strawberry Pie

One of my old time favorites is this rhubarb strawberry pie recipe. I combines health benefits of rhubarb with sweetness of strawberry. Enjoy!



Ingredients:

  • 1 pie crust

  • 1 cup rhubarb, chopped

  • 1/2 cup sugar

  • 1/2 cup water

  • 1 tablespoon gelatin

  • 1 cup strawberries, sliced

Instructions:

  • Preheat your oven to 375°F (190°C).

  • Roll out the pie crust and place it in a tart pan. Prick the bottom with a fork and bake for 15 minutes.

  • In a saucepan, combine the rhubarb, sugar, and water. Cook over medium heat until the rhubarb is soft and the mixture has thickened.

  • Remove from heat and stir in the gelatin until it has dissolved.

  • Pour the rhubarb mixture into the baked pie crust and let it cool to room temperature.

  • Arrange the sliced strawberries on top of the rhubarb jelly.

  • Chill in the refrigerator for at least 2 hours before serving.

Enjoy the delicious pie with rhubarb jelly and strawberries on top! 😋
