Avocado and Kiwi Fruit Salad

Ingredients:

  • 5 kiwi fruits

  • 2 avocados, medium ripe

  • 1/4 cup fresh lime juice

  • 1/2 tsp lemon zest

  • 1/3 cup coconut cream


Directions:


Step 1

Peel 3 kiwi fruit and chop into pieces. (Reserve the remaining 2 kiwi fruit for garnish).

Step 2

Remove the skin and seeds from avocados and place the flesh into a food processor or blender. Add the chopped kiwi fruit, coconut cream, lime juice and zest. Process/blend for 1-2 minutes or until very smooth.

Step 3

Spoon into 4 glasses to serve. Smooth the tops with the back of a spoon. Place in fridge for 2 hours or until firm.

Step 4

To serve: peel the reserved kiwi fruit. Halve and slice one, and cube the remaining one. Garnish each glass with slices and cubes.
